Verdict

Plain cooked turkey is a lean protein safe for most dogs and is used in many commercial dog foods. The dangers come from: cooked bones (splinter risk), the skin (too fatty, can trigger pancreatitis), and seasonings — especially onion and garlic commonly used in Thanksgiving turkey. Processed turkey products (deli meat) have high sodium.

What to do

Serve skinless, boneless, plain cooked turkey only. Always check for hidden seasonings, especially onion and garlic. Small amounts of deli turkey occasionally are fine; don't make it a staple due to sodium.
